Kellogg & Kimsey provided construction management for the transformation of an existing office space into a high-end, 200-plus-seat Roy's Hawaiian Fusion restaurant for the Bloomin' Brands company in Sarasota. The conversion required a complete gut of the office interior and a redesigned exterior facade, reshaping a workplace into a fine-dining destination for celebrity chef Roy Yamaguchi's signature concept. The finished space delivered a full commercial kitchen with dedicated back-of-house areas, an elegant front-of-house dining room, a full-service bar, private dining space, and new restrooms.
